Panettone

Panettone

Background and History

Panettone, a sweet and airy Italian Christmas bread, has a rich history dating back to Milan in the early 20th century. Legend has it that a young nobleman fell in love with a baker’s daughter and, to impress her father, created the now-iconic Panettone by adding butter, eggs, and dried fruit to the traditional Christmas bread. Today, this festive treat is enjoyed worldwide during the holiday season, often gifted and shared among family and friends.

Instructions

Activate the Yeast

In a small bowl, combine warm milk, a pinch of sugar, and active dry yeast. Let it sit for 5-10 minutes until foamy.

Prepare the Dough

In a large bowl, mix flour and remaining sugar. Add the yeast mixture, softened butter, eggs, salt, and vanilla extract. Knead until a smooth, elastic dough forms.

First Rise

Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for 2-3 hours, or until it doubles in size.

Add Fruits

Punch down the risen dough and fold in candied orange peel and raisins.

Shape and Second Rise

Shape the dough into a round loaf and place it in a Panettone mold or a lined cake pan. Let it rise for an additional 1-2 hours.

Preheat and Bake

Preheat the oven to 350°F (180°C). Bake the Panettone for 40-45 minutes or until golden brown.
