Special Fried Rice, known for its delectable combination of flavors and textures, is a popular dish in Chinese cuisine. With roots in traditional Chinese cooking, this dish was originally a humble way to use up leftovers. Ingredients:
- 2 cups cooked and cold white rice
- 2 tablespoons vegetable oil
- 2 eggs, beaten
- 1 cup diced cooked chicken, shrimp, or tofu
- 1/2 cup diced carrots
- 1/2 cup frozen peas
- 1/2 cup diced bell peppers (any color)
- 1/4 cup diced onions
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1/2 teaspoon sesame oil
- Salt and pepper, to taste
- 2 green onions, chopped (for garnish)
Instructions:
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the beaten eggs and scramble them. Remove the scrambled eggs from the pan and set them aside.
- In the same pan, add the remaining tablespoon of vegetable oil. Add the minced garlic and sauté for about 30 seconds.
- Add the diced chicken, shrimp, or tofu, and cook until they are heated through.
- Stir in the diced carrots, frozen peas, diced bell peppers, and onions. Cook for about 3-4 minutes, until the vegetables are tender.
- Add the cold rice to the pan and break up any clumps.
- Pour in the soy sauce, oyster sauce (if using), and sesame oil. Stir well to evenly coat the rice and ingredients.
- Return the scrambled eggs to the pan and mix them with the rice and vegetables.
- Season with salt and pepper to taste.
- Garnish the Special Fried Rice with chopped green onions.
- Serve hot and enjoy!
