Special Fried Rice, known for its delectable combination of flavors and textures, is a popular dish in Chinese cuisine. Ingredients:

  • 2 cups cooked and cold white rice
  • 2 tablespoons vegetable oil
  • 2 eggs, beaten
  • 1 cup diced cooked chicken, shrimp, or tofu
  • 1/2 cup diced carrots
  • 1/2 cup frozen peas
  • 1/2 cup diced bell peppers (any color)
  • 1/4 cup diced onions
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1/2 teaspoon sesame oil
  • Salt and pepper, to taste
  • 2 green onions, chopped (for garnish)

Instructions:

  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  • Add the beaten eggs and scramble them. Remove the scrambled eggs from the pan and set them aside.
  • In the same pan, add the remaining tablespoon of vegetable oil. Add the minced garlic and sauté for about 30 seconds.
  • Add the diced chicken, shrimp, or tofu, and cook until they are heated through.
  • Stir in the diced carrots, frozen peas, diced bell peppers, and onions. Cook for about 3-4 minutes, until the vegetables are tender.
  • Add the cold rice to the pan and break up any clumps.
  • Pour in the soy sauce, oyster sauce (if using), and sesame oil. Stir well to evenly coat the rice and ingredients.
  • Return the scrambled eggs to the pan and mix them with the rice and vegetables.
  • Season with salt and pepper to taste.
  • Garnish the Special Fried Rice with chopped green onions.
  • Serve hot and enjoy!
