Ingredients
- 6 cups beef broth
- 2 packs of ramen noodles
- 1 tablespoon sesame oil
- 1 onion, thinly sliced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/4 cup soy sauce
- 2 tablespoons sriracha sauce (adjust to taste)
- 1 tablespoon chili paste or chili oil (optional, for extra heat)
- 1 cup sliced mushrooms (shiitake or button)
- 1 cup sliced cooked beef (such as sirloin or flank steak)
- 2 green onions, sliced
- 2 soft-boiled eggs, halved
- Salt and pepper, to taste
Instructions
In a large pot, heat sesame oil over medium heat. Add the sliced onion and cook until softened, about 3-4 minutes.
Add minced garlic and grated ginger, and cook for another 1-2 minutes until fragrant.
Pour in beef broth, soy sauce, sriracha sauce, and chili paste or chili oil (if using). Stir to combine and bring to a simmer.
Meanwhile, cook the ramen noodles according to the package instructions. Drain and set aside.
Add sliced mushrooms and cooked beef to the simmering broth. Let it cook for about 5 minutes until mushrooms are tender.
Season the broth with salt and pepper to taste.
Divide the cooked noodles among serving bowls. Ladle the hot and spicy beef broth over the noodles.
Top each bowl with sliced green onions and halved soft-boiled eggs.
Serve hot and enjoy!
