Ingredients:

  • 8 ounces fettuccine or linguine pasta
  • 2 boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish

Instructions:

  • Cook the pasta according to package instructions until al dente. Drain and set aside.
  • Season the chicken breasts with Cajun seasoning on both sides.
  • Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for about 5-7 minutes per side, or until the chicken is cooked through. Remove the chicken from the skillet and set it aside.
  • In the same skillet, melt butter and add the sliced red and green bell peppers, diced onion, and minced garlic. Sauté for 3-5 minutes, or until the vegetables are tender.
  • Stir in the heavy cream, chicken broth, and grated Parmesan cheese. Bring the mixture to a simmer and cook for 5-7 minutes, or until the sauce thickens.
  • Slice the cooked chicken into strips and return it to the skillet. Cook for an additional 2-3 minutes to heat the chicken.
  • Season the sauce with salt and black pepper to taste.
  • Toss the cooked pasta with the Cajun chicken and creamy sauce.
  • Serve garnished with chopped fresh parsley.
