Traditionally, hollandaise sauce is made by whisking egg yolks in a bain-marie (a heatproof bowl set over a pot of simmering water) until they thicken and turn pale yellow. Then, melted butter is gradually added to the egg yolks while continuously whisking, resulting in a smooth and velvety sauce.

For our Eggs Benedict Breakfast Pizza recipe, we will need to assemble the hollandaise sauce before topping the pizza with poached eggs and Canadian bacon or ham. To do this, you’ll need:

a medium saucepan or bain-marie

a hand whisk or electric mixer

2 large egg yolks

1/4 cup (60ml) lemon juice or vinegar

1 tablespoon water

1/2 cup (120g) unsalted butter, softened and cut into small pieces

Salt, to taste

Purée of parsley or chives for garnish (optional)

To make the hollandaise sauce:

In a medium bowl, whisk together egg yolks, lemon juice or vinegar, water, and a pinch of salt until well combined.

Set the bowl over a saucepan filled with simmering water, making sure that the bottom of the bowl is not touching the water.

Begin whisking the mixture constantly with a hand whisk or electric mixer until it thickens and turns pale yellow, usually around 5-7 minutes.

Add softened butter to the egg yolks in small pieces while continuously whisking until all the butter has been incorporated and the sauce is smooth, shiny, and doubled in volume. Be careful not to add too much butter at once as it can cause the sauce to break or separate.

Remove the bowl from the heat and season the hollandaise sauce with salt to taste.

If necessary, strain the sauce through a fine-mesh sieve into a clean bowl to remove any curdled egg or air pockets.

Carefully pour the prepared hollandaise sauce over your toasted English muffin halves on top of Canadian bacon or ham, then place poached eggs on top.

Sprinkle with chopped parsley or chives for added color and freshness.
