Lobster Thermidor is a classic French dish that exudes luxury and indulgence. Named after a play, “Thermidor,” during the French Revolution, it features lobster meat mixed with a creamy, brandy-infused sauce, then returned to its shell and gratineed to a golden perfection. This dish has remained a symbol of extravagant dining since its creation in the 19th century.
Ingredients:
- 2 live lobsters (about 1 1/4 pounds each)
- 2 tablespoons butter
- 2 shallots, minced
- 2 cloves garlic, minced
- 1/4 cup brandy
- 1/2 cup heavy cream
- 1/2 cup grated Gruyère cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons Dijon mustard
- 1/4 teaspoon paprika
- Salt and black pepper to taste
- Fresh parsley for garnish
- Lemon wedges for serving

Instructions:
- Preheat your oven’s broiler.
- Bring a large pot of salted water to a boil. Add the live lobsters and cook for about 8-10 minutes, or until they turn bright red.
- Remove the lobsters from the pot and allow them to cool. Once cooled, crack the shells and remove the lobster meat. Reserve the lobster shells.
- In a skillet, melt butter over medium heat. Add minced shallots and garlic and sauté until they are soft and fragrant.
- Pour in the brandy and let it simmer for a few minutes to reduce by half.
- Stir in the heavy cream, Gruyère cheese, Parmesan cheese, Dijon mustard, and paprika. Season with salt and black pepper. Stir until the sauce is smooth and creamy.
- Add the lobster meat to the sauce, ensuring it’s coated evenly.
- Place the lobster shells in a baking dish. Fill each shell with the lobster mixture.
- Sprinkle extra Gruyère and Parmesan cheese on top.
- Place the baking dish under the broiler and cook for about 3-5 minutes, or until the cheese is bubbly and golden.
- Garnish with fresh parsley and serve with lemon wedges.
