Ingredients:
- 3 pounds chuck roast
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 cup beef broth
- 1/2 cup brewed coffee (leftover or freshly brewed)
- 1/2 cup ketchup
- 1/4 cup apple cider vinegar
- 1/4 cup brown sugar
- 1/4 cup Worcestershire sauce
- 2 tablespoons mustard
- 2 tablespoons chili powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper (adjust to taste)
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground allspice
Instructions:
- In a large skillet, heat the vegetable oil over medium-high heat. Sear the chuck roast until it’s browned on all sides.
- Place the browned roast in your slow cooker.
- In the same skillet, add the chopped onion and minced garlic. Sauté for a few minutes until the onion becomes translucent.
- Pour in the beef broth, coffee, ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, mustard, chili powder, salt, black pepper, cayenne pepper, cinnamon, and allspice. Stir well to combine.
- Bring the mixture to a simmer, then pour it over the chuck roast in the slow cooker.
- Cover and cook on low for about 8 hours or until the meat is tender and falling apart.
- Once done, shred the pot roast with two forks and serve it with the rich, flavorful sauce over cooked rice, mashed potatoes, or your favorite side dish.
