Georgia Pot Roast

Ingredients:

  • 3 pounds chuck roast
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup brewed coffee (leftover or freshly brewed)
  • 1/2 cup ketchup
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 1/4 cup Worcestershire sauce
  • 2 tablespoons mustard
  • 2 tablespoons chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice

Instructions:

  • In a large skillet, heat the vegetable oil over medium-high heat. Sear the chuck roast until it’s browned on all sides.
  • Place the browned roast in your slow cooker.
  • In the same skillet, add the chopped onion and minced garlic. Sauté for a few minutes until the onion becomes translucent.
  • Pour in the beef broth, coffee, ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, mustard, chili powder, salt, black pepper, cayenne pepper, cinnamon, and allspice. Stir well to combine.
  • Bring the mixture to a simmer, then pour it over the chuck roast in the slow cooker.
  • Cover and cook on low for about 8 hours or until the meat is tender and falling apart.
  • Once done, shred the pot roast with two forks and serve it with the rich, flavorful sauce over cooked rice, mashed potatoes, or your favorite side dish.
