Holiday Ham Pot Pies

Background and History

Holiday Ham Pot Pies capture the essence of festive gatherings, blending the warmth of holiday flavors into individual pot pies. Rooted in the tradition of utilizing leftover holiday ham, this dish combines comfort and celebration in a flaky pastry shell, making it a cherished addition to seasonal feasts.

Ingredients

2 cups cooked holiday ham, diced

1 cup frozen mixed vegetables (peas, carrots, corn)

1/4 cup unsalted butter

1/4 cup all-purpose flour

1/2 teaspoon dried thyme

1/2 teaspoon dried rosemary

2 cups chicken broth

1/2 cup heavy cream

Salt and pepper to taste

Refrigerated pie crusts (or homemade if preferred)

1 egg (for egg wash)

Instructions

Preheat Oven

Preheat your oven to 400°F (200°C).

Prepare Filling

In a skillet, melt butter over medium heat. Add flour, thyme, and rosemary, stirring to form a roux. Gradually whisk in chicken broth and heavy cream until the mixture thickens. Season with salt and pepper.

Add Ham and Vegetables

Stir in diced holiday ham and mixed vegetables, ensuring even coating in the creamy sauce. Remove from heat.

Line Pie Dishes

Roll out pie crusts and line individual pie dishes. Spoon the ham and vegetable mixture into each crust.

Cover with Pie Crust

Place another piece of rolled-out pie crust over the filling, sealing the edges by pressing them together. Trim excess crust and make small slits on top for ventilation.

Brush with Egg Wash

Beat an egg and brush it over the top of each pot pie for a golden finish.

Bake

Place the pie dishes on a baking sheet and bake for 25-30 minutes or until the crust is golden brown and the filling is bubbling.

Cool and Serve

Allow the pot pies to cool for a few minutes before serving.
