Ingredients
For Homemade Tomato Sauce:
4 large tomatoes, chopped
1 onion, diced
2 cloves garlic, minced
1 jalapeño, chopped (optional for heat)
1 tablespoon vegetable oil
1 teaspoon cumin
Salt and pepper to taste
For Chilaquiles:
1 bag (about 8 oz) tortilla chips
1 cup shredded cheese (queso fresco, cotija, or Monterey Jack)
2 avocados, sliced
Fresh cilantro, chopped
4 eggs (optional, for serving)
Lime wedges (for garnish)
Instructions
Prepare Tomato Sauce
In a saucepan, heat vegetable oil over medium heat. Add onions, garlic, and jalapeño. Sauté until softened. Add chopped tomatoes, cumin, salt, and pepper. Simmer for 15-20 minutes until tomatoes break down, creating a thick sauce. Set aside.
Assemble Chilaquiles
Preheat your oven to 375°F (190°C). On a baking sheet, spread out the tortilla chips. Pour the homemade tomato sauce evenly over the chips, ensuring they are well-coated. Sprinkle shredded cheese on top.
Bake
Place the baking sheet in the preheated oven and bake for 10-12 minutes or until the cheese is melted and bubbly.
Serve
Remove from the oven and transfer the chilaquiles to a serving platter. Top with sliced avocados, fresh cilantro, and optionally fried or poached eggs. Garnish with lime wedges.
