Background and History:

Air Fryer Fried Rice is a contemporary take on a beloved Asian dish. Fried rice has a rich history, with origins in China over a thousand years ago. It was created as a way to use up leftovers effectively. This updated version harnesses the power of the air fryer to create a flavorful and convenient meal.

Ingredients:

  • 2 cups cooked and cooled rice
  • 2 eggs, beaten
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1/2 cup diced cooked protein (chicken, shrimp, or tofu)
  • 2 tablespoons soy sauce
  • 1 tablespoon cooking oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ginger
  • Green onions for garnish
  • Sesame seeds (optional)

Instructions:

  1. Preheat your air fryer to 350°F (175°C).
  2. In a bowl, break the cooled rice into individual grains to avoid clumping.
  3. Add cooking oil to the rice and mix until it’s lightly coated.
  4. Place the oiled rice in the air fryer basket.
  5. Cook for about 15 minutes, shaking the basket or using a spatula to stir every 5 minutes until the rice is crispy and golden.
  6. Push the rice to one side of the basket and add the beaten eggs to the other side. Cook for an additional 5 minutes, stirring occasionally until the eggs are scrambled.
  7. Add the mixed vegetables and diced protein to the air fryer. Cook for 5-7 more minutes until heated through.
  8. Drizzle soy sauce over the fried rice and add garlic powder and ginger. Stir everything together and cook for an additional 2 minutes.
  9. Garnish with chopped green onions and sesame seeds (if desired).
