It was created as a way to use up leftovers effectively. This updated version harnesses the power of the air fryer to create a flavorful and convenient meal.
Ingredients:
- 2 cups cooked and cooled rice
- 2 eggs, beaten
- 1 cup mixed vegetables (peas, carrots, corn)
- 1/2 cup diced cooked protein (chicken, shrimp, or tofu)
- 2 tablespoons soy sauce
- 1 tablespoon cooking oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ginger
- Green onions for garnish
- Sesame seeds (optional)
Instructions:
- Preheat your air fryer to 350°F (175°C).
- In a bowl, break the cooled rice into individual grains to avoid clumping.
- Add cooking oil to the rice and mix until it’s lightly coated.
- Place the oiled rice in the air fryer basket.
- Cook for about 15 minutes, shaking the basket or using a spatula to stir every 5 minutes until the rice is crispy and golden.
- Push the rice to one side of the basket and add the beaten eggs to the other side. Cook for an additional 5 minutes, stirring occasionally until the eggs are scrambled.
- Add the mixed vegetables and diced protein to the air fryer. Cook for 5-7 more minutes until heated through.
- Drizzle soy sauce over the fried rice and add garlic powder and ginger. Stir everything together and cook for an additional 2 minutes.
- Garnish with chopped green onions and sesame seeds (if desired).
