8 oz elbow macaroni

1 lb cooked crawfish tail meat

1/2 cup unsalted butter

1/2 cup all-purpose flour

4 cups whole milk

2 cups sharp cheddar cheese, shredded

1 cup pepper jack cheese, shredded

1 teaspoon Cajun seasoning

Salt and pepper to taste
