  • 4 salmon fillets (6 oz each)
  • 1 cup panko breadcrumbs
  • Zest of one lemon
  • 2 tablespoons fresh parsley, chopped
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • Salt and pepper to taste
  • Olive oil for cooking


  • Preheat your oven to 400°F (200°C).
  • In a bowl, mix the panko breadcrumbs, lemon zest, and chopped parsley.
  • Season the salmon fillets with salt and pepper.
  • Dredge each fillet in flour, then dip into the beaten eggs.
  • Coat the fillets with the panko mixture, pressing it gently to adhere.
  • Heat olive oil in an ovenproof skillet over medium-high heat.
  • Place the salmon fillets in the skillet and cook for 2-3 minutes until the crust turns golden brown.
  • Transfer the skillet to the preheated oven and bake for 10-12 minutes or until the salmon is cooked through.
  • Serve hot and garnish with additional lemon zest and parsley if desired.
