  • 4 ripe plums, pitted and sliced

  • A pinch of salt

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the sliced plums with 2 tablespoons of sugar and ground cinnamon. Toss to coat the plums evenly and set them aside.
  • In another bowl, whisk together the flour, 2 tablespoons of sugar, baking powder, and a pinch of salt.
  • Add the cold, diced butter to the dry mixture and use a pastry cutter or your fingers to work the butter into the flour until it resembles coarse crumbs.
  • Pour in the milk and stir until the mixture comes together as a dough.
  • Divide the sugared plums between two oven-safe ramekins or small baking dishes.
  • Spoon the biscuit dough on top of the plums, dividing it evenly between the two dishes.
  • Place the ramekins in the preheated oven and bake for 25-30 minutes, or until the cobbler topping is golden brown and the plums are bubbling.
  • Remove from the oven and let it cool for a few minutes.
  • Serve your Plum Cobbler warm, with a scoop of vanilla ice cream or a dollop of whipped cream if desired.
