Sheet Pan Chicken Fajita Quesadillas

Background and History:

Sheet Pan Chicken Fajita Quesadillas are a fusion of Mexican and Tex-Mex cuisines. Traditional fajitas, with their sizzling hot peppers and tender chicken, have been a beloved dish for decades. Combining these flavors with the cheesy goodness of quesadillas creates a hearty and satisfying meal.

Ingredients:

  • 1 pound boneless, skinless chicken breasts, thinly sliced
  • 3 bell peppers (red, green, and yellow), thinly sliced
  • 1 red onion, thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons fajita seasoning
  • Salt and pepper to taste
  • 8 large flour tortillas
  • 2 cups shredded cheddar cheese
  • Salsa, guacamole, and sour cream for serving

Serves: 4

Preparation Time: 15 minutes

Cooking Time: 20 minutes

Instructions:

  • Preheat your oven to 400°F (200°C).
  • In a large mixing bowl, combine the sliced chicken, bell peppers, and red onion.
  • Drizzle olive oil over the mixture and sprinkle fajita seasoning, salt, and pepper. Toss until well-coated.
  • Spread the seasoned chicken and vegetable mixture evenly on a large sheet pan.
  • Roast in the preheated oven for about 20 minutes, or until the chicken is cooked through and the vegetables are tender.
  • While the sheet pan is in the oven, lay out the tortillas and sprinkle each with a portion of shredded cheddar cheese.
  • Once the chicken and veggies are ready, remove them from the oven.
  • Using tongs, place a generous amount of the chicken and vegetable mixture on one half of each tortilla.
  • Fold the tortilla over to create a half-moon shape, pressing gently.
  • Heat a large skillet over medium-high heat and lightly grease it.
  • Place the quesadillas in the skillet and cook until golden brown on both sides and the cheese is melted.
  • Cut the quesadillas into wedges and serve with salsa, guacamole, and sour cream.
