Ingredients
- 1 cup leftover cooked corned beef, diced
- 2 cups cooked potatoes, diced
- 1 small onion, diced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: chopped fresh parsley or green onions for garnish

Instructions
Preheat your air fryer to 400°F (200°C) for about 5 minutes.
In a mixing bowl, combine the diced corned beef, cooked potatoes, and diced onion. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.
Transfer the corned beef hash mixture to the air fryer basket, spreading it out in an even layer.
Cook in the air fryer for 10-15 minutes, shaking the basket halfway through cooking, until the hash is golden brown and crispy.
Once done, remove the corned beef hash from the air fryer and transfer it to a serving plate.
Garnish with chopped fresh parsley or green onions if desired, and serve hot.
