Ingredients:
- 2 cups cooked and cooled rice (preferably day-old)
- 1/2 cup cooked and diced pork (can use leftovers or fresh)
- 1/2 cup mixed vegetables (e.g., peas, carrots, bell peppers)
- 2 cloves garlic, minced
- 2 tablespoons cooking oil (e.g., vegetable or sesame)
- 2 tablespoons soy sauce
- 1/2 teaspoon sesame oil
- 2 eggs, beaten
- Salt and freshly ground black pepper
- Chopped green onions for garnish

Instructions:
- Begin by cooking the rice, and allow it to cool completely. Day-old rice works best, as it’s drier and won’t become mushy when stir-fried.
- Heat a large skillet or wok over medium-high heat and add the cooking oil.
- Add the minced garlic and stir-fry for about 30 seconds until it becomes fragrant.
- Push the garlic to one side of the skillet, and pour the beaten eggs into the other side. Scramble the eggs until they’re mostly cooked.
- Add the diced pork and mixed vegetables to the skillet and stir-fry for a few minutes until the vegetables are tender and the pork is heated through.
- Add the cooled rice to the skillet and break it apart with a spatula. Stir-fry the rice with the other ingredients.
- Drizzle the soy sauce and sesame oil over the rice and continue to stir-fry. Season with salt and freshly ground black pepper to taste.
- Continue stir-frying until everything is well combined and heated through.
- Garnish with chopped green onions and serve hot.
