Ingredients

4 cups almond milk (unsweetened)

4 large eggs

1 cup granulated sugar

1 cup almond meal

1 cup coconut cream

1 teaspoon vanilla extract

1/2 teaspoon ground nutmeg

1/4 teaspoon ground cinnamon

1/4 teaspoon ground cloves

Optional: 1/2 cup dark rum or bourbon (adjust to taste)

Whipped coconut cream and additional nutmeg for garnish

Instructions

Separate Eggs

Separate egg yolks from whites. Set whites aside.

Whisk Yolks and Sugar

In a bowl, whisk together egg yolks and sugar until well combined and slightly thickened.

Add Almond Milk and Almond Meal

Slowly add almond milk, almond meal, coconut cream, vanilla extract, nutmeg, cinnamon, and cloves to the egg yolk mixture. Whisk until smooth.

Optional Alcohol

If using alcohol, slowly incorporate the rum or bourbon into the mixture, stirring continuously.

Whip Egg Whites

In a separate clean, dry bowl, whip the egg whites until stiff peaks form.

Fold Egg Whites

Gently fold the whipped egg whites into the almond milk mixture until well combined.

Chill:

Refrigerate the eggnog for at least 4 hours or overnight to allow the flavors to meld.

Serve:

Before serving, give the eggnog a good stir. Pour into glasses, top with whipped coconut cream, and sprinkle with additional nutmeg.
