Sicilian Sausage Rolls (Tomasini)

Background and History

Sicilian Sausage Rolls, known locally as Tomasini, showcase the rich culinary heritage of Sicily. This delightful pastry dish has roots in traditional Sicilian cuisine, where flaky dough encases a flavorful filling of sausage, creating a portable and savory treat that has been enjoyed for generations.

Ingredients

For the Filling:

1 pound Italian sausage, casing removed

1/2 cup breadcrumbs

1/4 cup grated Pecorino Romano cheese

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

Salt and pepper to taste

For the Dough:

2 sheets puff pastry, thawed

1 egg (for egg wash)

Instructions

Preheat Oven

Preheat your oven to 375°F (190°C).

Prepare Filling

In a bowl, combine the Italian sausage, breadcrumbs, Pecorino Romano cheese, minced garlic, chopped parsley, salt, and pepper. Mix until well combined.

Roll Out Puff Pastry

Roll out each sheet of puff pastry on a floured surface to create a rectangular shape.

Form Sausage Rolls

Divide the sausage mixture evenly between the two pastry sheets, shaping it into a log along one edge of each sheet.

Roll and Seal

Roll the pastry over the sausage filling, sealing the edges by pressing them together. Place the rolls seam-side down on a baking sheet.

Brush with Egg Wash

Beat an egg and brush it over the top of each roll for a golden finish.

Bake

Place the baking sheet in the preheated oven and bake for 25-30 minutes or until the pastry is golden brown and the sausage is cooked through.

Slice and Serve

Allow the rolls to cool for a few minutes before slicing into individual portions. Serve warm.
