Simple Lemon Herb Chicken is a classic dish that combines the bright, tangy flavor of lemon with the aromatic goodness of fresh herbs. While its exact origin is unclear, it’s a beloved and timeless recipe that has made its way into countless kitchens worldwide.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 lemons
  • 2 tablespoons fresh rosemary (or 1 tablespoon dried)
  • 2 tablespoons fresh thyme (or 1 tablespoon dried)
  • 4 cloves of garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions:

  • Start by marinating the chicken. In a bowl, mix the juice of one lemon, rosemary, thyme, minced garlic, salt, pepper, and olive oil.
  • Place the chicken breasts in a resealable plastic bag or a shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
  • Preheat your grill to medium-high heat or prepare a grill pan on the stove. Make sure it’s well-oiled to prevent sticking.
