  • 4 boneless, skinless chicken breasts
  • 4 cups of your favorite mixed vegetables (e.g., carrots, potatoes, bell peppers)
  • 1 cup chicken broth
  • 2 cloves of garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste


  • Place the chicken breasts in the slow cooker.
  • Add the mixed vegetables around the chicken.
  • In a small bowl, mix the minced garlic, thyme, rosemary, salt, and pepper. Sprinkle this mixture over the chicken and vegetables.
  • Pour the chicken broth over everything.
  • Cover and cook on low for 4-8 hours or on high for 2-4 hours until the chicken is tender and fully cooked.
  • Serve the chicken and vegetables with the delicious, flavorful broth from the slow cooker.
