Instructions

  • In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
  • Add the stew beef cubes and cook until browned on all sides, about 5-7 minutes.
  • Add the chopped onion and minced garlic to the pot and cook until softened, about 2-3 minutes.
  • Pour in the beef broth and bring to a simmer.
  • Add the sliced carrots, cubed potatoes, sliced celery, dried thyme, dried rosemary, salt, and pepper to the pot.
  • Cover and simmer over low heat for 1 1/2 to 2 hours, or until the beef is tender and the vegetables are cooked through.
  • If you prefer a thicker stew, mix 2 tablespoons of all-purpose flour with a little water to make a slurry, then stir it into the stew and simmer for an additional 10-15 minutes until thickened.
  • Taste and adjust seasoning if necessary before serving.
